Pink, fluffy, boozy pancakes 😍 The perfect recipe to celebrate Galentine’s and Valentine’s Day in style.
Tequila Rose is a delicious blend of strawberry cream and premium tequila. Sounds amazing? It really is! It tastes amazing, like a strawberry milkshake for adults. I find the tequila flavour in this drink to be mild, it’s more a creamy type liqueur than can easily be enjoyed without mixing, just poured over some ice. As such, it’s perfect for many recipes.
Tequila Rose gifted me a few samples and asked me to create a recipe, Valentine’s Day themed, and here’s what I came up with: Easy-to-make, fluffy pancakes that are just delicious.
These pancakes have a subtle creamy strawberry flavour from the Tequila Rose and they can be paired with your favourite toppings. I went for indulgence with my toppings: whipped cream, strawberries, blueberries, dried cranberries and marshmallows. A delightful combo.
Tequila Rose Pancakes

Here’s what you’ll need:
- 2 eggs
- 2 tbsp sugar
- 3/4 cup buttermilk
- 1/4 cup Tequila Rose
- 1 + ¼ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- Pink food colouring (optional)
1- Whisk together 2 eggs and 2 tablespoons of sugar.
2- Add buttermilk, Tequila Rose, flour, baking powder and vanilla extract. Beat until you have a smooth batter. Add food colouring if you want.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour batter onto the hot pan. Flip over when bubbles start popping.

Tequila Rose Shortbread Bites
How about another Tequila Rose recipe?? I couldn’t resist creating another one, Tequila Rose is so delicious and a perfect ingredient for making treats!!
This no-bake recipe is fool-proof, all you need is a food processor and a few ingredients. For a tray of deliciously moreish Tequila Rose Shortbread Bites, you will need:
- 10x Shortbread biscuits
- 3 – 4 fresh strawberries
- 2 tablespoons of Tequila Rose
- 120g white chocolate (melted)
- Optional – sprinkles for topping
Add to a processor the shortbread, strawberries and Tequila Rose. Roll the mix into small balls and set in the fridge for 30 minutes. Melt the chocolate in a bowl, carefully dunk each ball (I used a toothpick) and quickly add any toppings if you wish. Refrigerate until set.
